Dairy Free Cheesecake Recipe for little ones

A quick and easy Dairy free cheesecake recipe

I made my partner an amazing (if I do say so myself) mars bar cheesecake for his birthday this weekend. Then mam guilt hit me and I realised that my 13m daughter wouldn’t be able to join us eating it because she has a dairy intolerance. So, I made her a no bake dairy free one and it was surprisingly easy and made in less than 5 minutes. (Setting time was a couple of hours) The title might imply its for babies and toddlers but this recipe will make the perfect individual size Dairy free cheesecake for an adult too.

What you need:

  • 2 dairy free digestive biscuits,
  • 1 heaped teaspoon df “butter/spread”,
  • 1 heaped tablespoon icing sugar,
  • df cheese spread (i used Asda’s own)
  • 4 raspberries.

It took me about 5 mins to make and was eaten in less than that!

Use the back of a spoon to crush the 2 digestive biscuits until they were fully dusty.(?) (I’m no baker, not sure of the right word!)

Next, pop a heaped teaspoon of dairy free spread/butter into the microwave for a few seconds until it’s fully melted. Mix the biscuits and spread together until they thickened up and then squashed them down into the bottom of the tub. Put it into that into the fridge to set at this point and move on to the cheesecake.

For this use a heaped tablespoon of dairy free spread, ours is just Asda’s own. Then add a tablespoon of icing sugar to that and mixed them together. I was going to make it a chocolate cheesecake to match ours. So at this point I would of melted some DF chocolate, then cooled it slightly. Then I would mix it in to the cheese and my mixture. Instead I had a last minute change of mind and added 4 raspberries instead. I crushed the raspberries with a fork and mixed it into the icing sugar and cheesespread mix.

Finally, take the biscuit base back out from the fridge then added the mixture to the top and pop it back in the fridge to set for a few hours or over night.

Once we sang happy birthday to her daddy and dished out the cake she had no idea she was having something different. It was obviously very tasty because it was demolished in an instant.

Make your own dairy free cheesecake and swap out the raspberries for another fruit or whatever you like for taste. Dont need dairy free cheesecake? Just use regular cheesespread instead.
